This has been my go-to lunch when the weather outside turns cooler . . . it is easy and fast and gives me that nourished and full feeling. Tip: I often buy my beets in the deli counter already roasted for not much more than they cost raw and avoid the whole mess of cutting and roasting myself.
2-3 Whole Beets roasted and cut into quarters
1/2 Avocado - diced
Handful of Walnuts
Olive Oil
Feta Cheese
Sea Salt
While the beets are warm, I dice the avocado- then layer on walnuts, feta cheese and olive oil sprinkled on top - and sea salt to finish!
