These are a FAVORITE at our house! So yummy! I make them in a mini muffin pan so they are bite size and perfect for kids and adults - full of protein and healthy stuff! And you can add any topping you want - cranberries, coconut, chocolate chips, etc.
Ingredients:
- 1 Cup Natural Creamy Peanut Butter
- 2 Large Eggs
- 2 Medium Sized very ripe bananas
- 1/2 t baking soda
- 1 t vanilla
- 2 T honey
- Toppings: dark chocolate chips, coconut, raisins, cranberries, etc.
- Preheat oven to 400 degrees.
- Place ingredients in the blender and blend until very well mixed.
- Pour batter into muffin tin greased.
- Add toppings on top and stir.
- Bake 9 minutes for regular muffins or 8 minutes for mini muffins.
